While there are some recipes that call for fresh passion fruits, we have found that using frozen ones works just as well! If you do choose to use frozen berries, make sure they are thawed first before processing in a blender or food processor.
Once your berry is slightly soft, add them to your pulp and liquid mixture. Using a spoon, break down the pulp until it has dissolved into the juice.
Peel the passion fruit
Once you have stored it in its sac, cut it open to remove the seedy part that has gone brown and soft. This can be done using a spoon or your hand depending on how much seedy mess you want to lose!
Once you have removed this, add the pulp to water and mix well. The water will soak up some of the juice, do not worry about this as most of the flavor is contained in the skin.
Now, place the peel into a bowl filled with sugar and stir until dissolved. This will preserve the leftover flavor in the passion fruit.
After this, pour both parts through a sieve to catch any residue left over from the process. You may discard this now or save for later use.
We recommend storing the preserved passion fruit liquid in an airtight container so it does not go bad. It will keep for one week if no other components are added to it.
Make the juice
Most recipes call for adding all of the other ingredients to your passion fruit juice at the beginning, then leaving the mixture to sit for the specified time before mixing in the sugar. This is not needed with this recipe!
To make pure passion fruit juice, add the seeds and pulp to water and blend until you no longer can tell where one ingredient ends and another begins. You will want to do this as close to full speed as possible to ensure there are no pieces left over.
Once everything has been completely mixed into liquid, pour the juice through a cheesecloth or coffee filter to remove any remaining bits. The leftover solid matter will sink to the bottom and you can either discard it or use it in another recipe.

Store passion fruit juice
Once you have your passion fruits, you can now make their juice! Simply wash the passion fruits first, then cut them in half using a knife or spoon. Use the tip of the knife to scoop out the white pulp and seeds, and put it into a bowl.
Now add some water and mash the flesh with a fork until it is completely dissolved. You will want to stir this process for at least a few minutes, as the peel may remain intact and block the liquid from escaping.
Once everything has been mixed together, use a strainer to filter the liquid content. It is best to do this right away as the acidity could gel the leftover bits.
After filtering, pour the juice into an airtight container and store in the refrigerator.
Add sugar if you like
If you would prefer it less sweet, you can always add more sugar! This will depend on your personal taste though, so do not feel that this option is wrong or bad.
There are two things to note about passion fruit juice. First, when adding salt or sugar, let the liquid sit for at least one minute before pouring to fully combine.
Second, make sure to stir the mixture well! Froth may form as the juice combines with the other ingredients, but if it disappears within a few minutes then you were not needed.
